Ginger Miso Dressing

Makes 1/2 cup.

1/4 cup (60ml) rice vinegar
2 Tbsp white miso
1 Tbsp mirin
2 tsp caster sugar
2cm piece fresh ginger (10g), grated
1 clove garlic, crushed
1 tsp japanese soy sauce
1 tsp sesame oil
1 Tbsp water

Combine ingredients in small saucepan; stir, over low heat, until sugar dissolves.

Goes well with prawns, chicken, fish, beef, stir-fried greens and pork.
