Makes 1/2 cup.
1 Tbsp rice vinegar
1/4 cup (60ml) lime juice
1 clove garlic, crushed
1 Tbsp brown sugar
1/4 cup (60ml) fish sauce
2 fresh small red chillies, sliced thinly
1 Tbsp finely chopped fresh coriander
Combine vinegar, juice, garlic, sugar and sauce in small jug; stand 15 minutes. Strain sauce, discard garlic; stir in chilli and coriander.
Goes well with prawns, chicken, pork, beef, and duck.
